We smoke our fish in the Old World way! We combine traditional European craftsmanship with all natural ingredients. We start with fresh Atlantic salmon from selected suppliers. Expertly cure it with sun dried sea salt to intensify the precious, natural Omega - C oil. This protects the delicate flavor of the fish.
We smoke it over a smoky fire using our exclusive hand cut local PEI hardwoods. We add no sweeteners and, of course, no artificial preservatives. This Old World way results in a buttery taste, moist texture, a firm yet delicate smoked flavor, and not salty. Read more about our process...
